Seasoning
A good seasoning system is vital for all snack-food producers as repeated surveys show that it is the taste of any product that primarily leads consumers to repeat purchases. Additionally, seasoning is often one of the main raw material costs for snack food producers. If you don’t have a seasoning system capable of putting just enough, but not too much, seasoning on each and every piece, then the chances are that you’ll have to over-season your products to meet customers taste requirements and that means you’re needlessly throwing your money away!
As seasoning coverage is so vital to producing good snacks, we have spent a great deal of time, effort and technology and have taken the lessons from sixty years experience to provide a variety of first rate seasoning solutions. All share the same quality engineering and renowned reliability, the technology platforms vary to suit individual needs.

Wright has four different classes of seasoning:
-
Class 4: manual throughput control. Drums that tumble effectively and don’t break the product, even oil and powder curtains.
-
Class 3 adds volumetric proportioning of product, powders and oils.
-
Class 2 adds product weighing
-
Class 1 adds product weighing and oil and powder weighing to ensure constant proportions under all conditions.

Class 1:
The product throughput is carefully measured by our patented Weighwright vibratory weigher. The seasoning feed is regulated by a loss-in-weight powder feeder that continually verifies the amount of powder applied and a straight Corollis oil mass measurement tube.
Class 2:
The product throughput is monitored by a Weighwright vibratory weigher. The seasoning and oil application rates are varied by volumetric proportional control.
Class 3:
The depth of product is monitored by an ultra-sonic sensor. There is no product weigh device. The seasoning and oiler application rates run in volumetric proportion.
Class 4:
The system requires a steady flow of product for example a single seasoning system fed direct from a fryer or oven on a sheeted product (constant density product). The operator manually set the oil and powder application rates which remain constant irrespective of changes in process output.
Typical application rates are:
Salt 1.6% : Seasoning 6%
Seasoning quality at the typical application rates is generally:
For 3 SDs
- Class 1 Salt < 0.11% 1.27% - 1.93%
- Seasoning < 0.35% 5.05% - 6.95%
- Class 2 Salt < 0.15% 1.15% - 2.05%
- Seasoning < 0.45% 4.65% - 7.35%
- Class 3 Salt < 0.25% 0.85% - 2.35%
- Seasoning < 0.75% 3.75% - 8.25%
- Class 4 Salt - Dependant on product and operator
- Seasoning
